Date Nut Protein Clusters

Since I hail from Chicago I grew up enjoying Turtles.. They’re a gooey, sweet and salty candy that’s delicious but loaded with refined sugar, caramel and nuts. Well, when I say these Date Nut Protein Clusters are a cleaner dupe, you’re just going to have to make them to become a believer! These functional treats are made with my FlavCity Chocolate Peanut Butter Protein Smoothie, Greek yogurt, and peanuts that all make them extra high in protein. Chopped dates provide the gooeyness and sweetness, along with some dark chocolate. A pinch of salt provides the perfect balance. You’ll be surprised by how delicious they are and how much they taste like the real thing!

Directions

  1. Roughly chop both the dates and peanuts and set aside. 
  2. In a bowl combine the Greek yogurt with the FlavCity Protein Smoothie and mix well. Add the dates and ¾ cup of the nuts (reserving ¼ cup peanuts for garnish) and stir to combine. 
  3. On a parchment-lined sheet tray using an ice cream scoop, scoop the mixture to make about 9 clusters. Place the tray in the freezer for about 3 hours or until they’re fully set.
  4. When the clusters are set but before you remove them from the freezer, prepare the chocolate topping. In a double boiler add the chocolate chips and stir occasionally until melted. Remove the chocolate from the heat and then take the clusters out of the freezer.
  5. Dip the bites into the chocolate and transfer them back to the parchment-lined sheet tray. Top with additional chopped peanuts and salt then place back in the freezer for about 15 minutes, until set. Remove them from the freezer and enjoy! 

Notes:

  • Store any leftovers in the freezer for up to 3 months.
  • If using FlavCity vegan protein smoothie, be sure to use 2 scoops. Grams of protein per serving will vary.
