Ingredients

Directions

  1. Place a 10-inch cast iron or heavy oven-safe skillet in the oven. Preheat to 425°F.
  2. In a blender, pulse the oats until a fine flour forms.
  3. To flour in the blender, add the eggs, milk, protein powder, vanilla, and salt, until smooth.
  4. When the oven is almost up to temperature, add the butter to the skillet and close the oven door to let butter melt and brown.
  5. When the oven is ready and butter is foamy, add the batter to the hot skillet and quickly return to the oven.
  6. Bake for 18 to 20 minutes, until the pancake has puffed and is golden brown. Do not open the oven door during baking.
  7. Meanwhile, in a small pot, combine the peaches and honey. Cook on medium-low heat until peaches are tender, stirring occasionally.
  8. To serve, spoon the peaches on the pancake. Sprinkle with cinnamon, if using.
