Baked chicken wings tossed in a buttery buffalo sauce served with avocado dipping crema. The key is to chill the wings in the fridge for 2 hours so the skin dries out and the chicken wings get insanely crispy in the oven.

The other week on the FlavCity Instagram I made some baked chicken wings are you guys were hounding me for the recipe! First I had to shoot the YouTube video and now I can share the blog recipe for the most crispy oven baked chicken wings ever. This baked chicken wing recipe is super crispy thanks to air chilling the skin in the fridge - that's the most important part. Tossed in a buttery homemade buffalo sauce and serve with creamy avocado dipping crema - so good!

Here are the steps for how to make crispy baked chicken wings:

  • 1. Toss the chicken wings with baking powder, spices, and place on a wire rack set in a sheet pan in the fridge for 2-4 hours. This will evaporate all of the moisture and help make the skin crispy.
  • 2. Bake the chicken wings in a 400 degree F oven for exactly 45 minutes and then turn the broiler on for the 5-7 minutes. This will ensure the chicken wings cook through and the skin gets nice and golden brown.
  • 3. Make the homemade buffalo sauce by combining 1/2 cup of Frank's hot sauce with 1/4 cup of god quality grass-fed butter, a pinch of salt, and 1 teaspoon of agave nectar or honey, optional.
  • 4. Toss baked wings in warmed buffalo sauce and coat well. Serve wings with avocado dipping sauce!

How Do I Make a Chicken Wing Dip?

A dip for chicken wings should e creamy and cool to help balance the spiciness of the wings. To make the avocado dipping sauce, combine 1 cup of full fat sour cream with half a large avocado, grated garlic, cumin, lemon juice, and blend in a food processor. Check for seasoning as you may need more salt or lemon juice. Chicken wing sauce can be made ahead of time and stored in the fridge, it won't turn brown because of the lemon juice.

What Temperature Should I Bake Chicken Wings At?

Bake chicken wings at 400 degree F (204 C) for 45 minutes. Make sure the wings are set on a wire rack inside a sheet pan. This will ensure even air flow and make the chicken wings crispy all around. After 45 minutes, set the broiler to medium and cook for 5-7 minutes or until the chicken skin is golden brown.

Instructions

  1. Line a sheet tray with tin foil and pace a wire cooling/baking rack inside. Toss the wings with the baking powder, smoked paprika, cumin, and arrange the wings one single layer and place in fridge for at least 2-4 hours. If you need to do two sheet trays that’s fine. The cold air will dry out the chicken skin and help make it really crispy in the oven.
  2. Pre-heat oven to 400 F. Season the wings with a good pinch of salt and spray some avocado oil over the skin. Place the sheet trays in the oven for 45 minutes, rotating the pans after 25 minutes, then turn the broiler to medium and cook another 5-7 minutes, or until the wings have are deep golden brown. Keep your eye on the wings or they will burn.
  3. While the wings are baking, make the buffalo sauce by adding everything to a small pot, bring to a gentle simmer, and cook for 5 minutes. Taste the sauce, it may need more maple syyup or monk fruit sweetener if you choose to use it. if you want to make the sauce incredibly velvety, blend it up. I like to use a hand blender for this. Remove from heat, but warm the sauce up right before tossing with the wings.
  4. Make the avocado dipping sauce by adding everything to blender or food processor and mixing well. Check for seasoning, you may need more lemon juice or salt. Sauce can be made ahead of time and stored in the fridge, it will not turn brown because of the lemon juice.
  5. Once the wings come out of the oven, place in a very large bowl and add enough buffalo sauce to coat, mix and shake well. Add more sauce if needed. Serve wings with leftover buffalo sauce and the avocado dipping sauce, enjoy!
