For the Coating:

  1. To a food processor, add the flour, cornstarch, baking powder, sugar, salt, cinnamon and Cinnamon Roll FlavCity Protein Smoothie then pulse a few times to combine. 
  2. Add in the cubed butter and continue pulsing until the butter forms pea-sized pieces.
  3. Then add 3 tbsp water to start, pulse, then add 2 more tbsp if needed. The dough will be crumbly, but stick together when you press it with two fingers. 
  4. Flour the counter and place the dough on top, use your hands to shape the dough into a rectangle, place in a zip top bag and refrigerate for 30 minutes. 
  5. Preheat the oven to 350F and line two sheet pans with parchment paper. 
  6. In a small bowl, stir together the cinnamon and sugar for the coating.
  7. In a separate bowl, whisk together the egg white and water til combined. 
  8. Remove the dough from the fridge and divide in half. Place half on a piece of parchment paper and roll out into a rectangle til it’s about ⅛ inch thick. 
  9. Brush the top with a very thin layer of egg white, then sprinkle with an even layer of cinnamon sugar. 
  10. Place a second parchment paper on top of the dough and gently flip, repeating the egg wash and cinnamon sugar on the other side. 
  11. Using a pizza cutter or small pastry cutter, cut lengthwise into ¾ inch thick strips then cut across to create squares. 
  12. Bake for 25-30 minutes or until deep golden brown and edges are even darker. Pro tip, about 20 minutes in, remove from oven and recut the cereal so it breaks apart easier later. 
  13. Remove from the oven, allow it to cool completely in the pan, then break it apart, pour a serving into a bowl along with milk of choice, and enjoy!
