These Cinnamon Roll Mini Muffins deliver all the cozy, bakery-style flavors of a fresh cinnamon roll in a perfectly poppable bite. Made with FlavCity Cinnamon Roll Protein Smoothie for a protein-packed twist, each mini muffin is topped with a buttery cinnamon crumble and finished with a sweet protein glaze. We partnered with Caraway and used their Mini Muffin Tin to create the perfect golden-brown texture and bite-sized shape, making these muffins ideal for meal prep, afternoon snacks, or a quick sweet treat any time of day.

Directions

  1. Preheat the oven to 350F and line the muffin tin with mini unbleached tulip muffin liners or lightly grease. 
  2. In a large bowl, add the almond flour, baking soda, and 2
    scoops of FlavCity Protein Smoothie. Combine well with a
    whisk and set aside.
  3. In a separate bowl, combine the melted butter, maple syrup and eggs. Whisk to combine. Then add the wet mixture to the dry ingredients and mix until combined.
  4. Take a large spoon or cookie scoop and one scoop to each of the muffin molds. 
  5. In another bowl, make the crumble topping by adding the almond flour, cinnamon, and butter and kneading it with your fingers until a nice crumble forms. It should be compactable, but also crumbly. Then generously top each of the muffins with the crumble mixture. 
  6. Bake for 10-14 minutes, until the center is set and an inserted toothpick comes out clean. Remove the pan from the oven and set it aside to cool.
  7. Next, make the glaze by mixing ½ scoop FlavCity Cinnamon Roll Protein Smoothie with 1 tablespoon of milk to start. If needed add more milk, one tablespoon at a time, whisking until it reaches a thick, but drizzly consistency. 
  8. Drizzle the glaze over top of the muffins as desired, and enjoy!
