If banana bread and banana pancakes had a baby, this is what it would taste like! These Protein Pancake Muffins are perfect for an on-the-go breakfast or an afternoon sweet treat. Our FlavCity Vanilla Cream Protein Smoothie makes them extra nutritious, and perfectly ripened bananas sweeten them with no added sugar. The rest of the ingredients give them the same texture and flavor as pancakes. You can make them whichever way you’d like; as muffins or pancakes. They’re delicious either way!

  • Preheat oven to 350F.
  • Prepare the wet ingredients. Peel and add the bananas to a large bowl and mash them to a pulp. Then crack in the eggs and mix until well blended.
  • Next add the remaining ingredients. First add the baking powder and vanilla extract and mix again until well blended. Then add the FlavCity Vanilla Cream Protein Smoothie and 4 tablespoons of paleo flour to start. Mix well, and add more as needed (up to a total of 9 tablespoons) until you achieve a texture that resembles thick pancake
    batter. If the batter gets too thick, add a splash of almond or dairymilk.
  • Then set the batter aside for 5 minutes so it can thicken.

  • Spray a ceramic muffin pan with avocado oil. Then fill each well with batter so it’s just over halfway up. Top with walnuts, if desired, and bake for 15-20 minutes, or until a toothpick comes out clean. ENJOY!

*Note:

  • If using FlavCity plant-based protein smoothie, be sure to double the amount.
