The easiest gluten free brownie recipe ever. Sweetened with coconut sugar and made with paleo flour mix.

Rose made this gluten free brownie recipe on Facebook the other day and it was a hit. The brownies are soft, fudgy, and you can't even tell they are gluten free.

How To Make Gluten Free Brownies

Start off the brownie recipe by mixing 1 cup of melted coconut oil with coconut sugar and vanilla until light and fluffy. Add 3 eggs and mix to combine. Set aside the bowl.

Combine the cacao powder, paleo flour mix, and salt in a large bowl and mix well. I recommend using raw cacao powder for this recipe, the color and flavor is lovely.

Add the wet batter on top of the dry ingredients and use a hand mixer to combine. ake sure you don't over-mix the batter or it might get too stuff.

Add the chopped walnuts, chocolate chips, and mix using a spatula. I used chocolate chips from Evolved. They are sweetened with coconut sugar, and the milk chocolate chips have cashew butter instead of dairy, so yummy.

Add the batter to a prepared baking dish and bake for 25 minutes, or until a toothpick comes out clean. Allow to cool and enjoy!

I used a smaller baking dish on purpose, the size was 7.5" X 6". You can use a bigger dish, but I wanted the brownies to be tall and fat.

  1. Preheat oven to 350F degrees.
  2. In a medium size bowl, add the coconut sugar, melted coconut oil, and vanilla. Use a hand mixer and beat for 1 minute on high. Add the egg and mix to combine.
  3. In another bowl, add the paleo flour mix, cacao powder, salt, and mix well using a whisk.
  4. Pour the wet batter over the dry ingredients and use a hand mixer until everything is just combined. Add the walnuts, chocolate chips, and use a spatula to mix well.
  5. Grease a 7.5" X 6" inch baking dish with coconut oil or spray with avocado oil. You can use a bigger baking dish, but I like tall, fat, brownies. Pour batter into dish and bake in the oven for 25 minutes, or until a toothpick comes out clean.

Recipe Notes

I used Bob's red mill paleo flour mix for this recipe, which is highly recommend. But you can use any gluten free all-purpose flour mix.
