These Watermelon Electrolyte Jelly Slices are a vibrant, refreshing twist on summer snacking! They’re made with watermelon, mixed fruit, and a FlavCity Electrolyte-infused gelatin mixture. Each slice delivers juicy flavors, a gorgeous array of summery & fruity colors, and a boost of essential minerals to keep you going in the summer heat. They’re as hydrating as they are eye-catching and fun to eat!

  1. Prep the watermelon. Cut the watermelon in half lengthwise and scoop out the flesh, leaving a ½-inch border so the rind holds its shape. Place each half, cut side up, in a bowl to keep them steady. Then, evenly distribute the mixed fruit into the hollowed watermelon halves.
  2. Make the gelatin mixture. Sprinkle the gelatin evenly over ½ cup cold water in a small bowl and let it ‘bloom’ undisturbed for 5–10 minutes, until thickened (don’t skip or rush this step). You’ll know it’s ready when it’s firm but jiggly. Then add 1¼ cups hot water (not boiling) to the bloomed gelatin and whisk until it’s completely dissolved and smooth. Let the hot gelatin mixture cool slightly for 2-3 minutes. Add the FlavCity Electrolytes, and whisk until completely dissolved. Then add the honey or maple syrup, and mix well again.
  3. Carefully pour half of the gelatin mixture over the mixed fruit into each half of the watermelon, filling to the edge being careful not to overfill. Place the halves in the refrigerator and chill for at least 6 hours or until fully set.
  4. Once firm, slice the halves into 3-4 wedges and serve cold. Enjoy!.

Note

  • Don’t use kiwi, papaya, pineapple or mango in your mixed fruit. They have enzymes that counteract the gelatin, so your mixture won’t set.
