Lemon and blueberry make a classic pair. And this Lemon Blueberry Chia Pudding is sweet and tart and packed with 30g of protein* per serving because it’s made with both our FlavCity Vanilla Cream Protein Smoothie plus Greek yogurt. Chia seeds are a great source of fiber, and because they bloom when mixed with a liquid like milk, they help to thicken this pudding. A compote of fresh blueberries and a few splashes of maple syrup give this pudding a perfect level of sweetness.

Directions

  • Place a saucepan over medium/high heat and add the blueberries, maple syrup, water, and lemon juice. Cook the mixture down for 10 minutes, giving it an occasional stir. Remove from heat and set aside to cool.
  • To a blender add the Greek yogurt, milk, FlavCity Protein Smoothie, chia seeds, maple syrup, vanilla extract, lemon zest and lemon juice, and blend until all ingredients are well combined and the mixture starts to thicken. It should be thick but pourable.
  • Use three 8 oz mason jars and evenly divide the blueberry compote among them. Next, evenly divide the chia pudding over the blueberry mixture leaving a little space on top. Finish by adding 1 tablespoon of Greek yogurt to each of the jars and top with more lemon zest (if desired). Refrigerate for at least 30 minutes or overnight and enjoy!
