Gluten Free Buckwheat Waffles

Gluten free waffle recipe made with buckwheat, coconut sugar, and almond milk. The ultimate paleo and gluten free waffle.

Dessi has been making these gluten free waffles a lot lately, so it's time to share the recipe. The waffles are made with nutrient dense buckwheat and sweetened with coconut sugar.

How To Make Gluten Free Waffles

The best flour to use for gluten frees is buckwheat. Buckwheat is a nutrient dense, gluten free grain. Add one cup to a large bowl along with paleo flour mix, baking soda, and salt.

In a separate bowl, add the eggs, melted butter, almond milk, coconut sugar, vanilla, and apple cider vinegar. Mix well then pour the ingredients on top of the flour and mix well.

Allow the batter to rest for 10 minutes so the flour can hydrate and thicken up.

The batter will be enough to make 4-4.5 large round waffles. Once the gluten free waffles come out of the maker, allow them to cool on a rack for 1 minute before serving. Enjoy!

  1. In a large bowl, add the buckwheat, paleo flour, baking soda, salt, and mix well.
  2. In a separate bowl, add the milk, eggs, melted butter, sugar, vanilla, vinegar, and whisk well. Add the wet batter to the dry ingredients and whisk well. Allow the batter to sit for 10 minutes so it can thicken.
  3. Preheat waffle iron, brush with melted butter, and cook the waffles in batches. Allow them to cool on a rack for a few minutes when they come out of the iron.
  4. Top with maple syrup and enjoy!
