  • Mix the dry ingredients together in a bowl and set aside.
  • In a separate bowl, mix together 2 eggs, avocado oil, and almond milk.
  • Add the wet ingredients to the dry ingredients and mix well. Then wait 5 minutes for the dry ingredients to hydrate well.
  • Preheat a griddle on medium heat and add ghee or oil to it. Then, pour four ¼ cupfuls of batter on the griddle to make the perfect-sized pancakes for this sandwich.
  • Cook the pancakes for about 1-2 minutes, until you see bubbles form. Then flip them to cook the second side for 1-2 minutes, until golden brown.
  • Meanwhile, scramble the remaining two eggs in a bowl with a pinch of salt and a crack of black pepper.
  • To a preheated pan, add a knob of ghee. Add the scrambled eggs to the pan and cook until well set around the edges without stirring them. (You want the eggs to be flat so you can fold them.) Then flip the eggs over to finish cooking on low heat. Remove from the pan, divide into two equal portions, then set aside.
  • Meanwhile in the same preheated pan, add your sausage patties and cook on medium until well browned. Flip over and cook the other side until well browned. Then top with shredded cheese and cover with a lid to melt the cheese.
  • Build your sandwiches with two pancakes each, the folded egg, and sausage with melted cheese, and enjoy!
Optional note: You can top your sandwiches with a few splashes of maple syrup to make it both sweet and savory, and extra delicious!
