Protein Sheet Pancake

Ingredients

  • 2/3 cup water
  • 2 large eggs
  • 1 large egg white
  • 3 tablespoons ghee
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 scoops FlavCity Chocolate Peanut Butter Protein Smoothie
  • 2 cups almond flour
  • 1/2 cup arrowroot starch or tapioca starch
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Fresh fruit

Directions

  • Preheat oven to 400F. Add the water, eggs, egg white, ghee, maple syrup, vanilla to a blender. Blend on high for 15 seconds.
  • Add the rest of the ingredients and blend on high until batter forms. It should be loose enough to pour, but if not, add just a little bit of water if needed.
  • Rub a quarter sized sheet pan with butter or ghee then fill the pan with the batter. Gently tap the pan on the counter to help it spread evenly.
  • Top the batter with fruit of choice and bake at 400F for 20 minutes. Enjoy!
