Protein Marshmallows

Ingredients

  • 2 cups milk
  • 5 tablespoons gelatin
  • 1 teaspoon vanilla extract
  • 2 scoops FlavCity Vanilla Cream Protein Smoothie
  • Tapioca starch (can substitute arrowroot starch)

Directions

  • Pour the milk into a sauce pan and dust the gelatin over the top of the milk. You can mix the two immediately, let it set for five minutes then heat the mixture on the stove. Or you can let the milk and gelatin sit for five minutes without mixing them, then heat it on the stove, mixing constantly as it warms up. Either way, you want the mixture of the two to be hot, but not boiling.
  • Immediately transfer the hot milk mixture to a stand mixer, add the vanilla extract and put it on speed two. You want to start cooling down the mixture before you add the protein smoothie mix, as it could seize and clump.
  • Once the bowl is slightly warm to the touch on the outside, add the FlavCity Protein Smoothie. Then slowly increase the speed of the mixer until it’s on the max speed and cover it with a towel so it doesn’t splash everywhere. Mix it for 10-20 minutes or until it is light and fluffy. You will know it’s done when you lift the whisk and the mixture does not break and fall immediately.
  • Dust a parchment paper-lined 8x8 pan with a little tapioca starch and pour the marshmallow mix into the pan. Smooth it out evenly with a spatula, then put it in the fridge for two to three hours to set.
  • Cut it into squares, and enjoy!
